Zucchini Bread - cooking recipe

2 c. sugar
1 c. oil
3 eggs, beaten
2 medium zucchini, grated
1 Tbsp. vanilla
3 c. flour
1 Tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/3 c. chopped walnuts
1 c. raisins
Preparation

Cream sugar and oil; add eggs, zucchini and vanilla.
Sift together flour, cinnamon, salt, baking soda and baking powder. Add raisins and nuts to wet ingredients.
Combine with zucchini mix.
Pour into two greased and floured 9 x 5-inch pans.
Bake at 350\u00b0 for 1 hour.
Let stand 10 minutes.
