Mexican Chicken Casserole - cooking recipe
Ingredients

1 (3 to 4 lb.) chicken, boiled and cut in pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro-Tel tomatoes, diced
1 lb. Velveeta cheese, cut into 1-inch cubes
1 (11 oz.) pkg. tortilla chips, crushed
1 medium onion, diced
Preparation

Combine Ro-Tel and cheese in a microwave-safe bowl and microwave until cheese is melted, stirring often.
Add both cans of soup; mix well.
Combine chicken, onion and 1/2 package of crushed chips in buttered 9 x 13-inch pan.
Pour soup and cheese mixture over chicken mixture and stir.
Cover with remaining crushed chips.
Bake in 350\u00b0 oven for 30 to 40 minutes.
