Liver In Creole Sauce - cooking recipe

Ingredients
    1/4 c. reduced-calorie Italian dressing
    1 lb. (1/2-inch thick slice) calf's liver, cut into 1/2-inch strips
    1 c. chopped onion
    1 c. chopped green pepper
    3/4 c. chopped celery
    1 clove garlic, crushed
    2 medium tomatoes, peeled and quartered
    1 (8 oz.) can tomato sauce
    1 tsp. chili powder
    1 tsp. dried whole oregano
    1/4 tsp. salt
    2 c. hot cooked rice, cooked without salt or fat
Preparation
    Combine first 6 ingredients in a skillet and cook over medium heat until vegetables are tender (2 to 3 minutes).
    Add tomatoes and next 4 ingredients.
    Bring to a boil.
    Cover, reduce heat and simmer 10 minutes or until liver is tender.
    Serve over rice.
