Eggplant Anina - cooking recipe

Ingredients
    5 or 6 medium eggplants
    10 or 15 small to medium potatoes
    2 qt. spaghetti sauce
    1 lb. Mozzarella cheese, sliced medium
    3/4 c. bread crumbs (flavored)
    1 c. grated Romano cheese
    salt and olive oil to cook with
Preparation
    Slice eggplants in circles; leave skin on.
    Slice potatoes; leave skin on.
    In one frying pan, fry eggplants with a reasonable amount of salt to get water out of eggplant.
    Drain well on paper towels.
    In another frying pan, fry potatoes.
    Drain well on paper towels.
