Golden Carrot Slices - cooking recipe

Ingredients
    2 lb. carrots, scraped and sliced crosswise
    1 can condensed tomato soup
    2/3 c. vinegar
    1 tsp. dry mustard or regular mustard
    1 medium onion, sliced thin
    1 medium green pepper, sliced thin
    1/2 c. sugar
    1/2 c. salad oil
Preparation
    Cook carrots until tender in salted water (about 10 minutes). Drain and cool carrots.
    Place carrots, onions and peppers in layers in a 1 1/2-quart size container.
    Mix soup, sugar, vinegar, oil and mustard together and pour over carrots.
    Cover and leave in the refrigerator several hours before serving.
    Will keep at least a week in refrigerator.
