Shrimp Jambalaya - cooking recipe

Ingredients
    2 Tbsp. shortening
    1/2 c. chopped onion
    1/3 c. chopped green onion
    1/2 c. chopped bell pepper
    1/2 c. chopped celery
    1/4 lb. diced, cooked ham
    1/4 tsp. garlic powder
    2 c. chicken broth
    3 large tomatoes, chopped
    1/4 c. parsley
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 tsp. thyme
    1/8 tsp. red pepper
    1 bay leaf
    1 c. uncooked rice
    1 lb. cleaned shrimp
    1/4 c. chopped green pepper
Preparation
    Melt shortening in large heavy skillet over medium heat.
    Stir in next 6 ingredients.
    Cook for 5 minutes.
    Stir in broth, tomatoes, parsley, salt, pepper, thyme, red pepper and bay leaf. Cover and boil.
    Add rice, gradually stirring with a fork.
    Cover and simmer for 20 minutes.
    Mix in shrimp and remaining 1/4 cup green pepper.
    Simmer until shrimp is done.
    Remove bay leaf and serve.
