Ingredients
-
2 c. seedless raisins
1 1/2 c. glazed fruit, cut
1 c. pecans, chopped
1/2 c. orange juice
2 tsp. vanilla
1 tsp. lemon flavoring
1 c. butter
2 c. sugar
2 eggs
4 1/2 c. sifted flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. soda
Preparation
-
Rinse raisins in hot water; drain dry. Combine raisins, glazed fruit, nuts, juice and flavoring; let stand.
Cream the butter and sugar until smooth. Add eggs, one at a time.
Mix until smooth. Add dry ingredients. Blend in fruit mixture by hand.
Let stand 1 1/2 hours in refrigerator, better overnight.
Divide into small amounts and drop on cookie sheet. Bake in preheated oven at 300\u00b0 for 12 to 15 minutes or until light brown.
You may divide cookie mixture into large balls, wrap in foil and store in the freezer for months, if you wish.
It keeps real well.
