Ingredients

3/4 c. leftover cereal
1 egg, separated
1 1/2 c. milk
1 Tbsp. melted butter
2/3 c. sugar
1/2 tsp. cinnamon
2 Tbsp. powdered sugar
2 tsp. vanilla
1 c. chopped dates or raisins
Preparation

Beat milk into cereal until smooth.
Add egg yolk, well beaten.
Add cinnamon, butter, sugar and raisins.
Pour into baking dish.
Bake in moderate oven for 45 minutes.
Beat egg white until stiff; beat in powdered sugar and vanilla.
Cover pudding with meringue and return to oven for 8 minutes to puff and color.
