Trout With Tomatoes And Herbs - cooking recipe
Ingredients

2 Tbsp. olive oil
2 cloves garlic, peeled and sliced
2 (1 lb.) brook or rainbow trout (cleaned with heads and tails left on)
sprigs of basil, parsley and chervil
6 plum tomatoes, peeled, seeded and chopped
2 Tbsp. torn fresh basil leaves
Preparation

Heat olive oil in skillet over high heat.
Add garlic slices and saute until golden brown and then set aside.
Dry trout and stuff cavities with fresh herbs.
Tie trout with kitchen string. Saute fish in hot olive oil for 4 minutes on each side.
Reduce heat and add tomatoes, basil and reserved garlic.
Cover and simmer for 8 to 10 minutes.
Serves 2.
