Eggnog Quick Bread - cooking recipe
Ingredients

2 eggs
1 c. sugar
1 c. dairy eggnog (not canned)
1/2 c. margarine or butter, melted
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. all-purpose or unbleached flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
Preparation

To Make Bread:
In a large bowl, beat eggs.
Add sugar, eggnog, margarine, rum extract and vanilla.
Blend well.
Lightly spoon flour into measuring cup.
Level off.
Add flour, baking powder, salt and nutmeg to creamed mixture, stirring just until dry ingredients are moistened.
Note: Mix by hand!
