Ingredients

1 unbaked pie crust
16 oz. buttermilk
3 Tbsp. melted butter
2/3 c. sugar
3 Tbsp. flour
2 eggs
1 tsp. lemon extract
1/4 tsp. cinnamon
Preparation

In a bowl mix together the buttermilk, flour and melted butter.
Blend until flour is mixed in.
Add the sugar and the eggs while beating the mixture.
Add lemon extract and continue to mix.
Heat oven to 425\u00b0 and prepare the crust.
Place the filling mixture in the crust and sprinkle the cinnamon on top.
Bake for 10 minutes.
Reduce the oven heat to 350\u00b0 and bake for 25 additional minutes.
Make sure filling is set.
Let cool and serve warm or chilled.
