3 or 4 large onions
2 to 3 c. buttermilk
1 egg, beaten
1 tsp. salt
1 1/2 tsp. baking powder
2/3 c. water
1 c. all-purpose flour
1 Tbsp. salad oil
1 tsp. lemon juice
1/4 tsp. cayenne pepper

Preparation

Peel onions and slice about 3/8-inch thick; separate into rings.
Pour buttermilk into a shallow pan.
Add onion rings and allow to soak 30 minutes.
Combine egg, salt, baking powder, water, flour, 1 tablespoon salad oil, lemon juice and cayenne pepper; stir until smooth.
In a deep container, heat salad oil to 375\u00b0.
Remove onion rings from buttermilk and dip into batter; fry in hot oil until golden brown.
Drain on paper towels.
