Pumpkin Nut Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    2/3 c. pumpkin
    1 tsp. lemon juice
    3/4 c. flour
    2 tsp. cinnamon
    1 tsp. baking powder
    1 tsp. ginger
    1/2 tsp. nutmeg
    1/2 tsp. salt
    1 c. chopped nuts
Preparation
    Beat the eggs on high speed with an electric mixer for 5 minutes.
    Gradually add the sugar.
    Blend in the pumpkin and lemon juice. Stir together, then blend in the flour, cinnamon, baking powder, ginger, nutmeg and salt. Spread batter in a greased and floured jelly roll pan. Sprinkle with the nuts.
    Bake at 375\u00b0 for 15 minutes. Turn out onto a towel that has been covered with powdered sugar. Roll and cool.
