Herbed Tomato Soup With Pasta - cooking recipe

5 c. canned vegetable broth
1 large potato, peeled and diced
1/2 c. chopped green onions
1/4 c. chopped fresh parsley
4 large garlic cloves, chopped
1 tsp. dried thyme
1 tsp. dried sage
2 c. spicy vegetable juice
1 c. small dried pasta
grated Cheddar cheese
croutons
Preparation

Combine first 7 ingredients in large Dutch oven.
Simmer over medium heat until potato is tender (15 minutes).
Add juice and pasta.
Simmer until pasta is tender.
Stir occasionally, about 8 to 10 minutes.
Season with salt and pepper.
Put in bowls and garnish with cheese and croutons.
