Dutch Green Pea Soup - cooking recipe
Ingredients

2 lb. pork neck, ham bones or pig feet (use lean pork meat for less fat)
2 c. chopped onions
2 c. chopped celery
1 c. chopped carrots
1 c. chopped parsley
1 tsp. pepper (white or black)
4 beef bouillon cubes
2 lb. dried green peas
2 lb. smoked sausage (not Italian, no garlic)
Preparation

Soak green peas overnight.
Cook meat with bouillon cubes 1 hour (when using bones, strain broth).
Add onions, celery, carrots, parsley, pepper and meat cut from bones.
Add green peas and boil at medium heat, stirring continuously, until the peas are soft and fully cooked.
Add the sliced smoked sausage.
Season to taste (pepper, salt, bouillon cubes).
Soup has to be thick. Serve with croutons.
