Cucumber Sauce - cooking recipe
Ingredients

1 medium cucumber (peel if skin is tough)
1/2 c. sour cream
3 Tbsp. mayonnaise
2 tsp. vinegar
1 Tbsp. minced parsley
1 tsp. finely chopped green onions
salt and pepper to taste
Preparation

Cut cucumber in half lengthwise, scoop out seed and discard. Grate the cucumber and drain.
Combine remaining ingredients with cucumber; chill thoroughly.
Makes about 2 1/2 cups sauce. Delicious over salmon loaf or fish.
