Cream Of Cauliflower Soup - cooking recipe

Ingredients
    1 large head cauliflower
    1/2 c. chopped celery
    4 to 5 c. chicken stock
    1 c. chopped leeks
    2 Tbsp. olive oil
    1/2 c. half and half or cream
    salt and pepper to taste
Preparation
    Core cauliflower.
    Place 1 cup of small flowerets in boiling, salted water to which 2 tablespoons lemon juice has been added. Cook about 5 minutes; drain and rinse with cold water.
    Set aside.
