Creamy Cashew Chicken Salad - cooking recipe
Ingredients

4 c. cubed cooked chicken
1 c. chopped celery
1/2 c. chopped green pepper
1 jar (2 oz.) diced pimentos, drained
1/2 c. mayonnaise
1/3 c. whipping cream
1/4 c. sour cream
3 Tbsp. thinly sliced green onions
2 Tbsp. minced fresh parsley
1 1/2 tsp. lemon juice
1 1/2 tsp. tarragon vinegar or cider vinegar
1 garlic clove, minced
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. salted cashews
Leaf lettuce and additional cashews, optional
Preparation

In a large bowl, combine the chicken, celery, green pepper and pimentos; set aside.
In a blender, combine all the other ingredients, except the cashews and lettuce.
Pour the blended ingredients over the chicken mixture and toss to coat.
Cover and refrigerate until serving.
