Lobster Newberg - cooking recipe

Ingredients
    1/2 c. butter
    lobster meat
    1 c. light cream
    1/2 tsp. nutmeg
    2 Tbsp. sherry
    1 Tbsp. flour
    1/2 tsp. salt
    2 egg yolks
Preparation
    Melt 1/4 cup butter; add sherry, then lobster meat and heat gently.
    In double boiler, melt 1/4 cup butter.
    Add flour and whisk briskly to get rid of lumps.
    Add cream and stir.
    Add salt and nutmeg.
    Mix egg yolks in a bowl.
    Stir about 1/4 cup white sauce into the eggs.
    Mix and return to the pan with remainder of white sauce.
    Stir and cook for 2 minutes.
    Add lobster mix and heat through gently.
    Do not boil or it will curdle.
