Summer Squash Casserole - cooking recipe

Ingredients
    6 c. washed and unpeeled yellow squash, sliced
    1/2 c. shredded carrots
    1/2 c. chopped onions
    1 (8 oz.) carton sour cream
    1 can cream of chicken soup
    1 (8 oz.) pkg. herb stuffing mix
    1/3 c. melted margarine
Preparation
    Boil onion and squash for 5 minutes; drain.
    Combine in small bowl the sour cream, soup and carrots; add squash and onion mixture.
    Add stuffing mix to melted margarine.
    Pour 1/2 of the stuffing mixture into a greased 2-quart baking dish, then pour the squash mixture on top of the bread mixture.
    Sprinkle remaining stuffing on top.
    Bake at 350\u00b0 for 25 to 30 minutes.
    Serves 8.
