Glorified Rice Salad - cooking recipe

Ingredients
    2/3 c. Minute rice
    2/3 c. water
    1/2 c. pineapple juice
    1/2 tsp. salt
    1 c. diced marshmallows
    6 diced maraschino cherries
    3/4 c. drained crushed pineapple
    1/3 c. chopped nuts
    2 c. whipped topping
Preparation
    Combine rice, water, pineapple juice and salt. Mix to moisten the rice. Bring quickly to a boil over high heat.
    Cover and simmer 5 minutes.
    Remove from heat.
    Let stand 5 minutes. Add marshmallows, cherries, pineapple and nuts.
    Cool to room temperature. Fold in whipped topping.
    Makes 8 to 10 servings.
