Cheddar Veggie Soup - cooking recipe
Ingredients

2 Tbsp. butter or margarine
1/2 c. onions, finely chopped
1/2 c. celery, thinly sliced
1 c. carrots, thinly sliced
2 c. broccoli florets
1 c. chicken broth
3 c. milk
1 c. Cheddar cheese, shredded
salt and pepper to taste
Preparation

In a large pot, melt butter.
Add onions and celery; cook for about 10 minutes under medium heat.
Add carrots, broccoli and chicken broth.
Cover and simmer 20 minutes.
Add milk and Cheddar cheese.
Stir until cheese is melted.
Add cornstarch to thicken, if necessary.
Add salt and pepper to taste.
