Carrot Casserole - cooking recipe

Ingredients
    2 lb. carrots
    1 medium onion
    2 1/2 to 3 1/2 c. Ritz cracker crumbs
    1 1/2 to 2 sticks melted butter
    1 to 1 1/4 bars Cracker Barrel cheese, grated
Preparation
    Cook carrots.
    While boiling carrots, mince onion and make cracker crumbs.
    Melt butter.
    Mash carrots; save some of the juice, about 1 1/2 to 2 cups.
    Mix all of the ingredients and the grated cheese together. Juice should be added, 1/2 cup at a time, to moisten.
    Bake at 350\u00b0 for 20 minutes. Sprinkle dried parsley on top.
