Tomato-Onion Salad With Herbs - cooking recipe

Ingredients
    4 thin slices sweet onion, separated into rings
    3 large ripe tomatoes, sliced
    salt
    freshly ground pepper
    1 Tbsp. balsamic vinegar
    1 Tbsp. chopped fresh parsley
    1 tsp. fresh thyme
    1 tsp. fresh oregano
    2 Tbsp. extra virgin olive oil
Preparation
    Combine onion and ice water to cover in bowl.
    Refrigerate 1 hour.
    Soaking the onions will remove its strong bitter flavor. Drain onions until dry.
    Arrange on serving platter with tomatoes. Sprinkle with salt and pepper.
    Whisk together vinegar, parsley, thyme, oregano and 1/4 teaspoon salt in bowl.
    Add oil gradually until well blended.
    Drizzle dressing over onions and tomatoes. Makes 8 servings.
