Zucchini Oatmeal Muffins - cooking recipe

2 1/2 c. flour
1 1/2 c. sugar
1 c. chopped nuts
1/2 c. quick oatmeal
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs, beaten
2 c. finely shredded zucchini
3/4 c. salad oil
Preparation

Preheat oven to 375\u00b0.
Grease or line muffin tins with paper. Measure 1st seven ingredients into large bowl.
In small bowl, mix eggs, zucchini and oil.
Stir egg mixture into flour mixture all at once, stirring only until flour is moistened.
Spoon batter into prepared muffin tins.
Bake for 25 minutes or until toothpick in center comes out clean.
Makes 12 (3-inch) muffins or about 18 (2 1/2-inch) muffins.
