Chicken Florentine(Good Covered Dish) - cooking recipe
Ingredients

4 whole chicken breasts or pieces, cooked (I cook with some celery, carrot and onion)
3 pkg. frozen chopped spinach, defrost and squeeze almost dry
1 c. mayonnaise
2 cans condensed cream of chicken soup
1 Tbsp. lemon juice
1/2 c. grated Cheddar cheese
1/2 c. buttered bread crumbs
Preparation

Cool chicken and remove skin and rib cage.
Place spinach in 9 x 13-inch ungreased casserole.
Place chicken on top.
Mix soup, mayonnaise and seasonings together and spread over chicken. Sprinkle with cheese and buttered crumbs.
Bake at 350\u00b0 uncovered 40 to 50 minutes.
May be assembled day ahead, except for crumbs.
