Chicken Cacciatore - cooking recipe

Ingredients
    1/4 c. olive oil
    1 (2 1/2 to 3 lb.) ready to cook chicken
    2 medium onions
    2 cloves garlic
    1 (1 lb.) can tomatoes
    1 (8 oz.) can tomato sauce
    1 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. celery seed
    1 tsp. crushed oregano or basil
    2 bay leaves
    1/4 c. cooking Sauterne or wine vinegar
Preparation
    Heat the olive oil in large skillet when hot enough to sizzle a drop of water.
    Add chicken pieces and brown slowly, turning once. Remove chicken from skillet and add the sauce mixture.
    Cover and simmer 45 minutes.
    Be careful not to let sauce simmer hard.
