Liz'S Vichyssoise - cooking recipe

Ingredients
    3 c. chicken broth
    1 bunch green onions, sliced
    1 1/2 c. diced raw potato
    1 c. raw green peas
    1/4 c. diced celery
    1 c. half and half
    1/4 tsp. white pepper
    salt to taste
Preparation
    Combine broth and vegetables in a heavy saucepan.
    Simmer 40 to 45 minutes until vegetables are tender.
    Cool slightly.
    Place mixture, in batches, in a blender and blend until smooth.
    Pour into a large bowl.
    Add half and half, pepper and salt to taste. Cover and chill until served.
    Garnish with chopped chives or finely chopped green onion tops, if desired.
