Beer Cheese Soup - cooking recipe

Ingredients
    1 c. onion, diced
    1 c. celery, diced
    1 c. carrots, diced
    1 c. mushrooms, diced
    1 bunch broccoli, steamed and added to bottom of bowl
    2 Tbsp. Parmesan cheese
    3/4 c. butter
    1/2 c. flour
    1 tsp. dry mustard
    5 c. chicken stock
    18 oz. beer
    10 oz. Cheddar or Colby cheese
    salt and pepper to taste
Preparation
    Saute first 4 ingredients with butter.
    Add flour and mustard and mix.
    Add remaining ingredients and stir.
