Ingredients

2 1/2 c. sugar
1 1/2 c. shortening
3 c. flour (plain)
1 c. sweet milk
1 c. flaked coconut
5 eggs
1 tsp. coconut extract
1/2 tsp. salt
1/2 tsp. baking powder
Preparation

Cream shortening and sugar. Add eggs; beat well. Sift dry ingredients together. Add coconut extract to milk. Add dry and wet ingredients to sugar mixture, ending with dry. Fold in flaked coconut. Bake in a large tube or Bundt pan which has been greased and floured. Bake in preheated oven at 300\u00b0 for 1 1/2 hours. Cool in pan 10 minutes, then turn out on rack or cake stand to finish cooling.
