Better Than Potato Salad - cooking recipe

Ingredients
    4 cups cooked long grain rice
    1 medium cucumber, seeded and chopped
    2 cups thinly sliced celery
    1/2 c. chopped onion
    8 radishes, sliced
    4 hard cooked eggs, chopped
    1 1/2 cups fat free mayonnaise
    3 Tbsp. prepared mustard
    Salt and pepper to taste
Preparation
    In large bowl, combine rice, cucumber, celery, onion, radishes, and chopped eggs.
    Combine mayonnaise and mustard.
    Mix well.
    Pour over rice mixture and toss.
    Cover and refrigerate at least 1 hour. (Serves 12.)
