Saucy Chicken Stir-Fry - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 c. carrots, cut in 2-inch long thin strips
    1 c. diagonally sliced zucchini
    1/2 c. quartered mushrooms
    1 Tbsp. cornstarch
    2 c. chicken broth
    1 Tbsp. soy sauce
    2 chicken breasts, cooked and cut up
    hot cooked rice
    2 Tbsp. diagonally sliced green onions
Preparation
    In 10-inch skillet over medium heat in hot oil, cook carrots, zucchini and mushrooms (may use other vegetables).
    In bowl, stir together cornstarch, chicken broth and soy sauce until smooth. Gradually stir in vegetables.
    Cook over medium heat until mixture boils and thickens.
    Stir in chicken; heat through.
    Serve over rice.
    Sprinkle with onions.
    Makes 4 servings.
