Baked Penne With Cheese And Veggies - cooking recipe

Ingredients
    6 oz. uncooked penne
    1 c. chopped onions
    1 minced garlic clove
    2 c. diced zucchini
    2 c. chopped cauliflower
    1 can tomato sauce
    2 tsp. dried Italian seasoning
    1/4 tsp. salt
    1/4 tsp. pepper
    1 c. nonfat Ricotta
    1/2 c. shredded reduced-fat Cheddar
Preparation
    Preheat oven to 375\u00b0.
    Boil water and add pasta, onions and garlic.
    Cook 5 minutes and add zucchini and cauliflower.
    Cook 5 to 7 minutes.
    Drain and transfer to a large bowl.
    Stir in tomato sauce, Italian seasoning, salt and pepper.
    Coat an 8 x 12 baking dish with nonstick spray.
    Spread 1/2 of pasta mix in dish.
    Layer with Ricotta cheese.
    Top with remaining pasta.
    Sprinkle with Cheddar.
    Bake for 12 to 15 minutes.
    Serves 4.
