Caldou-Seafood(Typical Joola Dish In The Casamance, Senegal) - cooking recipe

Ingredients
    1 lb. fish (fillets)
    1 1/2 onions, chopped
    2 Tbsp. lemon juice
    2 Tbsp. oil
    2 tomatoes, chopped
    3 c. water
    1 maggi cube (bouillon)
    salt
    2 c. rice
Preparation
    Cook onions in 2 tablespoons hot oil.
    Add tomatoes and boneless fish; cook for 3 minutes.
    Add water, maggi cube and salt to taste.
    Simmer for 20 minutes.
    Mix in 2 tablespoons of lemon juice and cook another 5 minutes.
    Serve over warm rice.
