Ruby Elliott'S Zucchini Casserole - California - cooking recipe

Ingredients
    2 c. shredded zucchini
    1 large onion, chopped
    1 clove garlic or 1 1/2 tsp. garlic salt
    1/2 bell pepper, chopped (optional)
    3 eggs, lightly beaten
    2 c. crumbled bread
    1/2 tsp. pepper
    1 tsp. salt (unless garlic salt is used)
    1 Tbsp. oil
    1/2 c. milk
    2 1/2 c. medium sharp cheese, grated
    1/2 lb. sausage, browned or sausage links
Preparation
    Into 2-quart saucepan with water to cover, add zucchini, onion, garlic and bell pepper.
    Cook until tender and drain well. May be microwaved.
    Into a large bowl, mix eggs, bread, pepper, salt, oil, milk, 1/2 cup cheese and sausage, then add zucchini mixture.
    Spray a 6 x 9-inch pan with Pam; pour mixture into pan and cover with remaining cheese.
    Bake at 350\u00b0 for 30 to 45 minutes or until dry.
