Fried Eggplant - cooking recipe

Ingredients
    1 large eggplant
    1 c. corn meal
    1/2 c. flour
    1 Tbsp. seasoning salt
    1 Tbsp. black pepper
    2 c. vegetable oil
    2 large eggs
Preparation
    Cut and wash eggplant in slices.
    Beat eggs thoroughly.
    Put cut eggplant into large bowl of water.
    Put vegetable oil in skillet.
    Turn heat to medium-high.
    Beat eggs in bowl 1. Mix corn meal, flour, seasoning salt and pepper in separate bowl 2. Dip 1 slice of eggplant in eggs then dip into meal mixture, then into hot skillet.
    Repeat until skillet is full.
    Turn in skillet as needed to avoid sticking.
    Repeat until all are cooked, should be golden brown and tender.
    Best when served hot.
    Always remember to season to your taste.
