Chipolte Chili De Pollo - cooking recipe

Ingredients
    2 to 5 fresh Chipolte or Serrano peppers, chopped
    1 whole chicken
    4 chicken bouillon cubes
    3 pods garlic, chopped
    1 large onion
    3/4 c. sliced carrots
    3/4 c. chopped celery
    mushrooms and any other vegetables of your choice
    1 bag garbanzo beans, soaked
    2 cubed avocados
    juice of 1 lemon
    handful of chopped cilantro
    cumin seed, salt and pepper to taste
    chunks of Monterey Jack cheese
Preparation
    In a stockpot, combine peppers, chicken, bouillon, garlic, onion, carrots, celery, mushrooms, garbanzo beans and approximately 6 to 8 cups of water.
    Cover with cumin seed, salt and pepper to taste.
    Simmer for 3 hours.
