Ingredients

5 medium beets or 1 (24 oz.) can sliced beets
2 oranges
1/2 c. orange juice
2 Tbsp. water
1 tsp. cornstarch
pinch of nutmeg
Preparation

Peel and section oranges; set aside.
In small saucepan, bring orange juice to a boil.
Stir the 2 tablespoons water and cornstarch until dissolved.
Stir into boiling orange juice. Reduce heat to medium-low; cook until thickens and boils.
Stir in oranges and nutmeg.
Keep warm until ready to serve.
Pour orange sauce over beets and arrange the oranges.
