Beef Or Pork Tenderloin With Herbs - cooking recipe

Ingredients
    1 Tbsp. fresh rosemary
    1 Tbsp. fresh sage
    3 cloves garlic, finely chopped
    1 tsp. pepper
    1 tsp. salt
    3 lb. beef or pork tenderloin
    1/4 c. virgin olive oil
    1/4 c. vegetable oil
    1 1/2 c. dry white wine
Preparation
    Mix
    first
    5
    ingredients.
    Cut
    1/2-inch deep pockets into roast.
    Mix
    oils; pour over roast.
    Cook, basting every 20 minutes.
    Cook 1 hour.
    Add 1/2 cup wine.
    Cook 20 minutes, then add
    another
    1/2 cup wine.
    Tent with foil to keep warm. Add 1/2 cup more wine to pan drippings and brown until thickened.
