Zucchini Cheese Muffins - cooking recipe

Ingredients
    1 c. flour
    3/4 c. seasoned bread crumbs
    3/4 c. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    1 c. (4 oz.) shredded Cheddar
    2 eggs, beaten
    1 (5 fluid oz.) can evaporated milk
    1/4 c. butter, melted
    1 1/2 c. shredded zucchini
Preparation
    In a large bowl, combine flour, bread crumbs, sugar, baking powder and salt. Stir in cheese.
    In a medium bowl, combine eggs, evaporated milk and butter.
    Stir in zucchini. Add zucchini mixture to flour mixture.
    Stir until moistened.
    Spoon into greased muffin cups.
    Bake 20 to 25 minutes or until lightly browned in a 400\u00b0 oven.
    Yields 1 1/2 dozen.
