Squash Supreme - cooking recipe

Ingredients
    2 lb. yellow summer squash
    1 small can water chestnuts
    salt and pepper to taste
    1/2 pkg. Pepperidge Farm stuffing mix
    1 medium diced onion
    1 small jar pimentos (optional)
    1 (8 oz.) carton sour cream
    1/2 stick margarine
Preparation
    Boil together squash and onion for 5 minutes.
    Drain well in colander.
    Drain water chestnuts and add to squash with pimentos, sour cream and salt and pepper.
    Mix well.
    Melt margarine in glass 8 x 12-inch baking dish.
    Cover bottom of dish with stuffing mix reserving half to sprinkle on top.
    Spoon squash mixture over stuffing and sprinkle remaining stuffing on top.
    Cover and bake at 300\u00b0 for 25 minutes.
