Flaky Herb Chicken - cooking recipe

4 oz. buttery crackers, made into crumbs
2 Tbsp. Parmesan cheese
1/2 tsp. each: basil and oregano
4 thin chicken cutlets
1/2 c. plain yogurt
4 tsp. vegetable oil, divided
Preparation

Preheat oven to 425\u00b0.
Combine cracker crumbs, cheese, basil and oregano.
Dip 1 chicken cutlet into yogurt, then into crumb mixture, coating both sides evenly.
Repeat with remaining cutlets.
Arrange chicken on nonstick baking sheet; drizzle each cutlet with 1/2 teaspoon oil.
Bake chicken until lightly browned, 7 to 8 minutes.
Turn cutlets over; drizzle each with 1/2 teaspoon oil.
Bake until cooked through and lightly browned, 7 to 8 minutes longer.
