Zucchini Cake - cooking recipe
Ingredients

1 1/2 c. oil
3 c. sugar
4 eggs
3 c. ground or grated zucchini (unpeeled)
3 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1 c. nuts
1 c. raisins
Preparation

Blend and cream oil and sugar.
Add eggs; beat after each egg is added.
Add zucchini and mix.
Mix flour, baking powder, baking soda, salt and cinnamon together; add to zucchini mixture and beat well.
Fold in nuts and raisins.
Bake in a 9 x 15-inch or 11 x 17-inch pan at 350\u00b0 for approximately 1 hour.
Cool.
