Light Peach Shortcake - cooking recipe

6 Tbsp. sugar, divided
2 c. peeled, sliced peaches
1 tsp. lemon juice
2 1/3 c. buttermilk baking mix
1/2 c. skim milk
4 Tbsp. melted low calorie margarine
Preparation

Preheat oven to 375\u00b0.
Grease 9-inch square baking pan.
In medium bowl, combine 2 tablespoons sugar, peaches and lemon juice; set aside.
In another medium bowl, stir together baking mix, remaining 4 tablespoons sugar, milk and margarine until blended. Pour batter into 9-inch square baking pan.
Bake 15 to 20 minutes. Cool cake on wire rack.
To serve, cut cake into squares; top each with 1/4 cup peach mixture.
Makes 8 servings (240 calories and 9 g fat per serving).
