Ed'S Concoction Chili - cooking recipe

Ingredients
    3 Tbsp. olive oil
    3 (4 oz. each) cans mushrooms, drained (optional)
    4 cans red kidney beans with liquid
    2 cans diced tomatoes with liquid
    2 cans whole, peeled tomatoes with liquid
    1 c. celery, chopped
    2 c. onion, chopped
    5 cloves garlic, minced
    1 1/4 lb. ground round, sirloin or venison
    1/2 tsp. cayenne pepper or to taste
    chili powder to taste
Preparation
    In large stock pan, place oil and heat on medium heat.
    Add meat, onion, celery and garlic.
    Cook until meat is browned and onions are clear.
    Add all ingredients.
    Cover and bring to a boil. Turn down heat and simmer for 1 1/2 hours.
    Freezes well.
