Oven Baked Chicken(Fake Fried Chicken, One Of Lisa Trapani'S Favorites) - cooking recipe
Ingredients

6 chicken breast halves, skinless and boneless
14 Snack Well's fat-free wheat crackers
6 slices plain Melba toast
1/2 c. flour
2 Egg Beaters (1/2 c.)
1/2 c. liquid Butter Buds or fat-free chicken broth
salt and pepper to taste
Preparation

Use rolling pin to crush crackers and Melba toast on a piece of waxed paper.
Place the flour on a small plate.
Pour the Egg Beaters on another small plate.
Pour the liquid Butter Buds or chicken broth into a large nonstick skillet.
Turn stove on low to medium.
Coat the chicken breast with flour.
Dip them in Egg Beaters, then roll them in the cracker crumbs to coat well.
In the skillet, cook until both sides are golden.
Place on a baking sheet prepared with a nonfat cooking spray.
Bake at 350\u00b0 for about 15 to 20 minutes or until crisp.
Serves 6.

238 calories, 17 g carbohydrates, 3.5 g fat, 31 g protein, 73 mg. cholesterol.
For variety, add 1 tablespoon nonfat Parmesan cheese to the cracker mixture.
You can also pour on some barbecue sauce or grated nonfat cheese to make the chicken more flavorful, but not fatter.
