Tofu Spinach Parmesan - cooking recipe

Ingredients
    2 lb. tofu (4 cakes)
    1/2 lb. Mozzarella cheese
    1 (10 oz.) bag fresh spinach
    2 c. spaghetti sauce
    2 eggs
    3/4 c. seasoned bread crumbs
    olive oil
    herb salt to taste
Preparation
    Cut the tofu into halves or quarters.
    Beat egg, dip tofu into egg, then into bread crumbs.
    Saute in olive oil until brown on both sides.
    Pour 1/3 of spaghetti sauce into a casserole dish and place breaded tofu on top; set aside.
    Wash spinach well and steam ever so slightly.
    Drain well and place on tofu.
    Cut Mozzarella cheese into cubes and place on top of each piece of tofu.
    Cover with the rest of sauce and bake at 350\u00b0 for 45 minutes or until bubbly.
    Serve with fettucini, salad and garlic bread.
