Copper Country Quiche - cooking recipe

1/2 c. (1 stick) butter
1 (3 oz.) pkg. cream cheese
1 c. all-purpose flour
1 lb. fresh spinach, washed and trimmed
3 eggs
1/2 c. mayonnaise
1/2 c. sour cream
8 slices bacon, cooked and crumbled
1 c. fresh mushrooms, sliced
Preparation

In food processor with steel blade or in large mixer bowl, cut butter and cream cheese into 1 cup flour until mixture forms a smooth dough.
Roll out to fit a 9-inch pie or quiche pan.
Freeze 10 minutes.
In large saucepan, place spinach.
Cook over medium heat a few minutes until wilted.
Drain and chop.
Drain well on paper towel.
In a large bowl, combine spinach with the 2 tablespoons flour.
Mix in remaining ingredients.
Pour mixture into prepared pastry shell.
Bake at 350\u00b0 for 50 to 60 minutes until set in the center.
Makes 1 (9-inch) quiche.
