Salmon Croquettes - cooking recipe

Ingredients
    1 (1 lb.) can red salmon
    1 egg
    1 tsp. lemon juice
    1 tsp. chopped onion
    1/2 c. cracker crumbs
    1/2 tsp. salt
    fat for frying
Preparation
    Break salmon into fine pieces and add beaten egg, lemon juice, onion, salt and 1 tablespoon of cracker crumbs.
    Form into cakes (4-inches wide by 1/2-inch thick).
    Roll in remainder of crumbs and fry until golden brown.
    If using deep fat fryer, start on high and switch to medium high (375\u00b0) for 10 minutes.
