Red Beans And Rice - cooking recipe

Ingredients
    2 lb. andouille sausage
    1 large onion, diced
    1 large bell pepper, diced
    3 to 4 cloves garlic, finely diced
    2 grated carrots
    2 to 3 stalks finely shredded celery
    5 cans dark kidney beans
    3 cans dark kidney beans, processed into paste
    1 large can diced tomatoes
    1/2 c. chopped parsley
    2 bay leaves
    salt and pepper to taste
Preparation
    Saute sausage for 5 to 10 minutes. Remove sausage but leave grease in skillet. Add the next 5 ingredients; saute 5 minutes and then add to crock-pot, including grease. Add the remaining ingredients to crock-pot and cook on low for 3 to 5 hours or until done. Serve over rice.
